Howdy Friends! And welcome to your weekly community video.  And yea, this one got a little … complicated.  What was supposed to be a series of random events that occurred somehow turned into a full-blown video.  You’re welcome.  LOL!

But since you’re reading this here, let’s throw in some “exclusive” content that the folks over on YouTube don’t get to see.

“The Recipe”

I promised in the video I would share the recipe for steak and mushroom, so here ’tis.  And it’s very simple.  Smother a well marbled steak with olive oil.  Dust with salt and pepper.  Then … dust it even more with instant coffee.  But not just any instant coffee.  You gotta go Cuban.  Use Cafe Bustelo.  It’s actually instant espresso.  LOL!  Super hot pan, preferably cast iron.  Sear both sides in olive oil, remove, and let it rest.  (Oh, and add some butter once you flip the steak and splash the melted buttery goodness on the side that just got sizzled.  Use the same pan and saute some onions and mushrooms (salt, pepper, and thyme).  Add more butter and olive oil as necessary.  Add a splash of stock at the end (just a bit) to gravy it up a skoosh.

Oh!  And please plate it better than I did.  I was hungry and in a hurry.  (Excuses!)

In the video I mentioned Nikki.  If you’re new here, she was my girlfriend of eight years and we recently separated.  She’s currently in Spain hiking the Camino De Santiago and I’m in the American West driving my own camino.  But … we are talking.  It’s awkward to say the least, but there is a part of us that still has a good measure of hope.  I don’t know where this will end because there are quite a few things that need to be worked on, but neither of us seems ready to just toss in the towel quite yet.

And finally … I’m so looking forward to spending a week in Taos.  Not driving.  Just experiencing.  I currently have to plan after, other than to see a friend about an hour south.  It’s all kinda open, which in my current state of mind, is just fine.

PS:  And by the way, Starlink isn’t my friend.  Apparently my cable is toast.  Which begs the question … how do I get one from an online company when I have no fixed address?  I’m still working on that one …. sigh.
